White Bean Chili
I am definitely a soup girl and can eat them all year round. One of my favorite flavors is the white bean chili with some cheesy quesadillas for dipping. I love the the spicy yet hearty yet light soup. This soup just makes you feel good!

This recipe is a favorite in our household. A little different take on your regular chili. Pair this soup with a cheesy quesadilla.

 - 6 Chicken thighs
 - 1 yellow onion
 - 2 poblano peppers
 - 1 tomatillo pepper
 - 1 Teaspoon Chili powder
 - 1 Teaspoon Paprika
 - 1 Teaspoon Salt
 - 5 Cups Chicken broth
 - 1/2 cup Heavy cream
 - Garnish on top-
 - Scallions
 - Chives
 - Cilantro
 - Avocado
 - Cheddar cheese
 
Directions
- Preheat oven to 450 degrees. Place chicken thighs on baking sheet and sprinkle with salt and pepper and paprika. Place in oven and cook for 40mins. Until crispy brown.
 - Chop onions and poblano peppers and sauté in large soup pot. Add a Teaspoon of chili powder, paprika, salt and pepper. Chop and add your tomatillo. Once chicken is cooked and cooled, shred and add to soup.
 - Add to quarts of chicken broth and 3/4 of a cup of whole milk. Once soup starts to simmer add one can of white beans. Let me simmer for 15mins-20mins.
 - Now your ready to serve. Chop your avocado, scallions, chives, cilantro and cheddar cheese.
 - Add to toppings. We also, like to add a cheese quesadilla to dip in our household. Enjoy!
